Here's Minneapolis-St. Paul, I find the 2010 map almost as pretty as Seattle's...

East San Jose definitely became more Hispanic, and now it's possible to draw a Hispanic district from San Jose to Salinas. I think there's a good chance it will be drawn.

Hmm, I wonder how the shifts would be. My guess is SD became a lot more Hispanic.
Oakland would be interesting. They had some massive white flight, some even bigger black flight, and yet didn't lose that many people.
